Place the rest of the taleggio over the top of the rice cake. At this point, you can cover and refrigerate the dish for several hours. When ready to bake, take the pan out of the fridge to take the chill off. Preheat the oven to degrees then bake the risotto for 30 - 35 minutes, until the edges are golden, the cheese is melted and the center is heated through.

And I have to point out, this recipe was developed a decade ago — way before the current cauliflower rice and pizza crust craze. Maybe we have him to thank for cauliflower being in just about everything these days? The recipe is simple. The results divine. Small rice grain-size pieces of cauliflower are simmered in heavy cream until tender. Shredded Gruyere cheese is then folded in until melted, and the dish has a risotto-like consistency.

Very cool atmosphere, service was good and the food was very affordable, thinking of doing my family reunion in there banquet room. Dino's in an unassuming, quite and somewhat out of the way eatery in Midtown Memphis. These factors only serve to add to the charm of this family….
